smoked salmon & cucumber bites


  • 1 english cucumber, peeled and sliced into 1/4 inch pieces 
  • 1 package of boursin or any herbed creamy cheese
  • 1 package of smoked salmon 
  • 1/4 cup of white wine vinegar
  • 1-2 tbspn whole grain mustard 
  • very finely sliced red onion (around 1/8th of a medium sized onion) 
  • 1 tspn of crushed peppercorn
  • 1 tspn of garlic salt 
  • 1tspn of dried dill
  • 2 tspn of capers


  • Combine the white wine vinegar, whole grain mustard, sliced red onion, peppercorn, garlic salt, dill, and capers into a bowl--stir and let it sit so the onions start to pickle (the longer you let this sit, the better. You can even do this step hours or a day ahead.) 
  • Take you sliced cucumbers and spread the boursin onto each slice
  • Top each slice with a piece of smoked salmon 
  • Drizzle each piece with the vinegar mixture, making sure some capers and onion land on each piece 
  • Serve and enjoy!
