homemade french onion dip w/ greek yogurt

  • 1-2 medium yellow onions, quarter it and slice very thinly (lengthwise) ** After I made the recipe, I think I am going to chop the onions into smaller pieces --perhaps halve the onion strings, just because it is easier to get the onion onto the chips when dipping)
  • 2-3 cups of nonfat, plain green yogurt
  • 8 oz of light cream cheese (softened)
  • 4 teaspoons of Worcestershire sauce
  • 1/2 cup of water w/ 1 chicken bouillon cube ( or chicken stock concentrate equivalent)
  • 3-4 cloves of garlic, minced
  • 1 stalk of green onion, minced
  • 2 teaspoons of thyme
  • salt and pepper to taste
  • olive oil ( enough to cook the onions with)

  • Place a medium sized skillet over medium to medium high heat
  • Pour olive oil into the hot pan and add both onions and garlic-- cook for 10 min, stirring occassionally
  • Add bouillon/ chicken stock concentrate and water mixture to the pan
  • Stir frequently until the water dissolves
  • Season the onions with salt, pepper, thyme, and Worcestershire
  • Remove from heat and transfer to a plate to cool down
  • In a medium bowl, mix together the greek yogurt and cream cheese
  • Stir in the onion mixture until completely combined
  • Taste and see if you would like to add anything more based on taste preference (i.e.. more salt, pepper, worcestershire)
  • Garnish with green onion
  • Serve at room temperature or chilled!
